A filling and healthy breakfast!


  • 2 eggs
  • diced mushrooms
  • diced onions
  • diced tomatoes
  • cottage cheese
  • diced chilli
  • spinach leaves
  • 1 slice of whole grain bread
  • sliced peppers
  • parmesan


  1. Heat pan with 1 tbsp olive oil
  2. Wash and chop all your vegetables
  3. Break your eggs and mix with spices: garlic, cajun, finely ground pepper, paprika
  4. When pan is hot, start
  5. Put diced onions and peppers, stir around for 30 seconds
  6. Add mushrooms
  7. Add 2 table spoons cottage cheese
  8. Add parmesan, break up in your hand
  9. Add spinach leaves
  10. Add mixed eggs
  11. Add diced tomatoes
  12. Stir quickly
  13. Let it cook for 1 or 2 minutes, stirring occasionally
  14. Serve with toasted bread.

My closing thoughts

This is usually what I will have for breakfast every day. I keep it interesting by mixing in different vegetables, cheeses or trying out different kinds of bread. One thing I want to try adding in are some peas.
